Avocado and Hummus go better together! This super simple avocado hummus toast is quick, healthy, and makes for the perfect breakfast, lunch, or snack. The hummus has got your protein, avocado those healthy fats, and some extra pops of colour (and vitamins) in the cherry tomatoes and arugula. My secret is using my roasted red pepper hummus recipe on a toasted multigrain bun, which is an absolute game-changer, but any hummus will do just fine.
*makes 2 pieces
2 pieces multigrain bread
6 tbsp hummus of choice
pinch of cayenne pepper
salt & pepper to taste
1/2 cup arugula
1/2 cup cherry tomatoes, halved
Toast your bread and mash your avocado.
Spread 3 tbsp of hummus on each piece of toast, and on top of the hummus spread your mashed avocado. Sprinkle the salt, pepper, and cayenne on the avocado and arrange your halved cherry tomatoes on top. Finish with arugula and you're good to go!
