Sometimes I think styling my food is my favourite part about doing this whole blog thing... And then I realize that neither cooking nor styling my food is even that important, because the best part is eating it!
If you like beets you will love this beet & mixed berry smoothie bowl! It has a very earthy flavour from the beets with a subtle sweetness thanks to the mixed berries.
This smoothie is chock-full of antioxidants from the beets, blackberries, strawberries, blueberries and raspberries. You don't need every single type of berry I used, but I would use at least 2 varieties.
1 medium beet, boiled
2 cups frozen mixed berries (I used raspberries, strawberries, blackberries, blueberries)
1 tsp vanilla
1 tsp maple syrup
1/2 cup cashew milk
2 frozen bananas
Whatever toppings you choose, I used:
dried gogi berries
Add all ingredients to your blender or food processor and blend until smooth. Top with your favourite toppings and enjoy!
