This delicious dessert is also extremely healthy and simple to put together. Banana ice cream is a classic vegan favourite, but what makes it truly amazing is how customizable it is.
I froze 2 large bananas and a cup of pineapple, tossed it in the food processor with some sweetener, and then threw in some shredded coconut at the end.
This dessert is basically just a glorified fruit smoothie, but has the exact same texture as soft serve ice cream (so it's ok to eat for breakfast, which is what I did).
I topped it off with additional coconut, bee pollen (not vegan), and some vegan dark chocolate.
2 large bananas, frozen
1 cup chopped pineapple, frozen
1/4 cup shredded coconut, unsweetened
1 tsp coconut sugar
1-2 tsp nut milk
Put the frozen bananas, pineapple, nut milk, and coconut sugar in a food processor and blend until smooth, 3-4 minutes. Once smooth, add the coconut and pulse for another 5 seconds.
Transfer to bowls and top with whatever you desire. Enjoy!
