Eating oatmeal doesn't have to be a chore anymore! The bland, boring, difficult-to-swallow oatmeal of your past can be replaced by something that will leave you wanting more (not to mention it's totally vegan, and totally healthy).
This breakfast takes about 5 minutes to prepare and is packed full of great stuff that will leave you full until lunch time. Oatmeal is packed full of antioxidants and fibre that will keep you looking youthful inside and out. It lowers LDL cholesterol levels, helps to stabilize blood-glucose levels, and is incredibly effective for weight-management and weight loss because the fibre keeps you satiated.
Don't be afraid to use full-fat coconut milk. These fats are super important for the maintenance of a healthy body, and believe it or not, eating these fats helps you lose weight (or maintain a healthy weight).
2/3 cup rolled oats
2/3 cup hot water
6 tbsp coconut milk (full fat)
2 tbsp maple syrup
6 strawberries, sliced
1 banana, sliced
4 tbsp sunflower seeds
2 tbsp shredded coconut
Combine the oats and hot water and cover for 5 minutes. Add the coconut milk and maple syrup and stir.
Separate into 2 bowls and top with strawberries, banana, sunflower seeds, and shredded coconut. Enjoy!
